Eggplant Chard Fritatta: Breakfast
Swiss chard is boiled, chopped and sautéed with onion, garlic and cayenne pepper which provide deep, caramelized flavors to the egg base. Tarragon, thyme, basil and parsley add complex herbal notes to this delicious frittata, topped with grilled eggplant.
Corn Bell Pepper Soup: Lunch
Bell peppers, onions and tomatoes are sautéed sweet and seasoned with fresh garlic, ginger and red pepper flakes. Fresh cilantro and opal basil are stirred in just before serving to add an herbal hue to this spicy spin on cream of corn soup.
Roasted Summer Squash Spaghettini: Dinner
Zucchini, eggplant, carrots, cheery tomatoes and garlic are seasoned with red pepper flakes and Italian seasoning, then roasted in the oven. Roasting gives the tomatoes, carrots and garlic a sweet softness, contrasting beautifully with hearty whole wheat pasta, salty parmesan and fresh flat leaf parsley.
Spiced Okra: Snack
Okra is caramelized in the oven and tossed with tart lemon juice. Curry powder adds a kick to this simple side dish that highlights okra’s naturally savory flavor.
