Meatless Monday, is a campaign that encourages people to “cut out meat one day a week” for health and environmental benefits. Eliminating meat doesn’t automatically make your diet healthier. Oats, sunflower seeds and applesauce make a delightful moist-crunchy contrast in these apple pastries. Brown sugar, whole-wheat flour, apples and dates give these muffins a dark, smoky sweetness which pairs well when served with coffee.

Roasted Pepper Lentil Lemon Salad: Lunch
Red bell peppers are roasted sweet and soft before they are tossed with French lentils, carrots, onion and celery. This bright, refreshing salad dresses the medley of lentils and veggies with tart Dijon lemon vinaigrette.
Red Miso Eggplant: Dinner
Chinese eggplant is cut thin, steamed and seasoned with toasted sesame oil and salty red miso. This simple steamed eggplant is delicious when served atop brown rice, with scallions for garnish.
Grilled Figs with Thyme & Honey: Dessert
This is the perfect note on which to end late season barbeque. Figs are grilled soft and topped with savory thyme leaves and sweet honey in this simple dessert which shows off the fruit of fall.
