Meatless Monday was launched in 2003 and now there are homegrown versions of the “cut out meat one day a week” program in 21 countries with more popping up all the time. The growing global movement will be stronger and spread faster if we all share what we’re doing. This Week’s Meatless Monday Menu

meatless monday logoCorn Dill Omelet: Breakfast
Havarti cheese with dill gives this omelet a creamy consistency and subtle herbal flavor. Fresh corn kernels are cooked sweet and crunchy in this breakfast which shows off delicious flavor and texture contrast. This recipe comes to us from our friends at Dofino. Serves 2

A refreshing salad of avocados, tomato and scallions is dressed with a spicy cilantro lime vinaigrette. The potato gallette encloses the avocado salad with a crisp, salty contrast.
Roasted Tomato Black Bean Soup: Dinner
Tomatoes, onion and garlic are roasted sweet in the oven to contrast hearty black beans. Chili powder and cumin add a little heat before this soup is puréed and garnished with chopped cilantro.
No Bake Peach Cobbler: Dessert
This cobbler uses the nut to its fullest potential, as walnuts and dates form the crust and for a peach lime cashew filling. Pecans are ground to “crumbs” and then seasoned with cardamom and cinnamon in this no-oven-needed dessert.
