I survived! This past weekend, this single mom took three kids camping with my son’s Boy Scout Den. Granted, I wasn’t completely alone in the wilderness with them, and I had help setting up the tent. It was definitely a mild version of true camping, but that was exactly what I was looking for. I have camped before, but to be honest, those camping trips included my own private RV. I miss that RV.
I decided to bring my crock pot with us to do the bulk of the cooking we had to do while there. Saturday night’s dinner was pot luck, with the main dishes being provided by the den. I had to come up with two breakfast meals and one lunch for my family. We were staying on a campsite with water and electricity so that pretty much made my decision for me. I loaded up my cooler with all the breakfast supplies I would need and set off on our adventure. Considering how late we made it to our campsite, we were all exhausted and I was glad I could throw the ingredients into the crock pot and be able to sleep in, or at least just be lazy, for as long as possible in the morning.
After the grueling tent set-up with three exhausted kids, it only took five minutes to throw it all together. I even decided to give those crock pot cooking bags a try, for ease of clean-up. For the first morning I made an egg with sausage breakfast. It was delicious, every one of my kids ate it up and there was plenty left to share with other hungry campers. I already have the ingredients on-hand to make it again this week before school. I will let you know after I try it myself, but this meal seems like a dish that could be used as leftovers very easily. The second morning I made a french toast dish, which in my opinion would be best eaten all at once. I am going to play with that recipe, it was good but not my favorite, but I think it was the type of bread I used. I used a fancy kind of bread and I think that a regular loaf of bread may work better. My son loved it though, and he did ask for more later that day.

Egg and Sausage Crock Pot Scramble Recipe
- 6 eggs
- 1 package Pre-cooked breakfast sausage crumbles
- 7 slices bread
- 2 cups milk
- 2 cups cheddar and monterey jack cheese blend
- Salt and pepper to taste
Crack eggs into bowl and scramble. Add milk, salt and pepper and mix thoroughly. Cut slices of bread into cubes and add to mixture and pour into crock pot then top with shredded cheese. Put crock pot on low for six hours. Feel free to be creative and customize this dish to your own tastes. There are so many ingredients you can add… just think of your favorite omelet for inspiration.
Crock Pot French Toast Recipe
- One dozen eggs
- 2 tsp vanilla
- 2 tsp cinnamon
- 1/4 cup brown sugar
- One loaf sliced bread
In a bowl mix together eggs, vanilla, brown sugar and cinnamon. Slice bread slices in half. Cover crock pot with non-stick spray. Place bread in crock Pot and pour mixture over bread and cook on low setting for 6 hours. When done cooking, remove lid and cook for another thirty minutes. Serve topped with syrup, powdered sugar or fruit topping.
Crock Pot Beef Taco Recipe (makes about 12 tacos)
- 1 lb of beef
- 1 envelope of taco seasoning
- 1 10 oz can of tomatoes & green chiles (like Rotel)
Dump all 3 ingredients in your Crock Pot, mix, and cook on Low for 5-6 hours.
What ever left overs like meat, avocado, beans, cheese, salsa could be added to eggs and have the next morning for breakfast.
Best tip I can give you is get a block of dry ice for your cooler!
