Tomorrow’s Crock Pot Meal

Salsa Chicken is on! It’s Monday night… enjoy that Mac & Cheese for dinner knowing that tomorrow’s dinner is already planned out as well.  Trust me, that makes for a much more enjoyable meal.  Salsa Chicken is on the calendar for tomorrow night and it sounds good to me!  I have not tried this recipe yet but was it was given to me by a friend who assured me that my kids would love it.

To make my morning flow a little smoother, all the non-perishable ingredients have been placed in a basket for this recipe after my shopping trip and put on a shelf in my pantry.  This “recipe basket” is ready to be pulled out the night before and placed next to my crock pot.  The less I have to do in the morning, the better.  I don’t have a basket in my refrigerator but I do try to pull any items needed and put them on a tray for easy access.  For the chicken, I have left it in the freezer this time.  I usually thaw my meat overnight in the refrigerator but my friend assured me that the frozen chicken cooks up great, so I am taking her word and giving it a try.

Salsa Chicken

  • 4 skinless, boneless chicken breasts
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 can cream of chicken soup
  • 1/2 cup sour cream

Directions:  Sprinkle taco seasoning over chicken breasts and place in crock pot.   Pour salsa and soup over chicken.  Cook on low for 6 to 8 hours.  Remove from heat and stir in sour cream.

Since placing this recipe on our menu calendar I have come across a few variations, such as, adding a can of black beans or a can of corn.  I have also have a couple different ways to serve this meal.  The first was over rice but the chicken can also be shredded at the end of the cooking time and served in a whole wheat tortilla as a chicken taco.  This can also provide for several left-over options.

I have mentioned in earlier posts that my kids love homemade quesadillas in their lunch boxes at school, so that is my leftover plan.  I am going to make the quesadillas as soon as the chicken is done cooking.  I know better than to wait until after dinner, there is too much to do once bedtime is lurking.

That also motivates me to get their lunches done for the week, which is the way I find works best in my house.  A little tidbit I learned from my sister who is a full-time working mother of three high school students.  Ahhhh… something to look forward to.  Anyways, my sister started her routine of shopping and making lunches for the entire week on Sundays when she went back to work and she told me it worked best for her.

So there you have it, a healthy meal for dinner tonight and a couple of options for left-overs as well!  Enjoy and let me know what your family thought of this meal.  We will be rounding it out with our staple salad as well as a side dish of corn.  I am also throwing a baked potato in for my kids who specifically requested the addition to a meal this week.  Enjoy the rest of your Labor day and just remember, dinner is all set for tomorrow.
