November is National Peanut Butter Lovers Month

Peanut Butter and BreadDid you know that the month of November is Peanut Butter Lovers Month? Americans love their peanut butter, and it is estimated that as a country, we’ll consume over 65 million pounds of it during the month of November alone. The first patent for peanut butter, which went to Dr. John Harvey Kellogg, was applied for on November 4th, 1895, so November 4th became the anniversary date to celebrate our love of peanut butter. The celebration was extended to the whole month after the 100th anniversary celebration in 1995. In honor of Peanut Butter Lovers Month, here are a few simple and healthy peanut butter recipes that the whole family will be sure to love.

  • Apple, peanut butter, and granola sandwich. It doesn’t get much simpler than this. Core an apple, and slice it horizontally into several slices. This will make be the “bread” for your sandwich. Spread two apple slices with peanut butter, then sprinkle on your granola. Top each peanut butter and granola covered apple with another apple slice, and voila: you have apple, peanut butter, and granola sandwiches.
  • Energy bites. Start by preheating the oven to 350 degrees, and spraying a cookie sheet with cooking spray. Then combine a cup of peanut butter, ½ cup of sugar, an egg, and ½ cup of wheat germ in a bowl, and mix together well. Scoop tablespoons of the resulting thick dough onto the cookie sheet and bake for 10 to 12 minutes. The sides of the bites should just be beginning to brown when they’re done. Allow them to cool, then they’re ready to eat.
  • Peanut butter and banana smoothie. This makes a great breakfast treat, and it’s very simple. Combine a scoop of chocolate or vanilla protein powder, a frozen banana cut into pieces, a tablespoon of peanut butter, and a cup of milk in a blender with three large ice cubes. Blend until smooth, and it’s ready to drink. Perfect for the mornings when you need a little bit of extra energy.
  • Peanut butter and banana bagelwich. Try this if you’re in need of a quick and healthy lunch. Spread two slices of a thin toasted bagel with peanut butter and top with banana slices. If you want, try sprinkling the sides of the sandwich with chia seeds. Put the sides together and you’re good to go.

You may be aware that there was a recent recall of almond and peanut butters produced by the company, Sunland Inc. The recall was instigated because of concerns about salmonella contamination. You’ll want to be sure to avoid buying any of the recalled products if they happen to still be on the shelves, so check here for an updated list of products and brands to avoid for now.  Happy Peanut Butter Lovers Month!

Love peanut butter!! I generally skip the bread/bagel and go straight for the banana (or apple slices) with peanut butter. But a single slice of lightly toasted bread withall natural creamy peanut butter and honey for a treat…can’t beat it!
